Laudemio by Fattoria San Michele a Torri is the estate's flagship olive oil and the very finest selection of its organic extra virgin olive oil.

The olives are harvested early in the Chianti hills outside Florence and milled on the estate within 12 hours of harvesting to preserve exceptional freshness, vibrant aromas and naturally occurring plant compounds.

The result is an intensely fresh and elegant olive oil with notes of freshly cut grass and artichoke, balanced fruitiness and the distinctive peppery finish that defines extraordinary extra virgin olive oil.

Tuscany's Liquid Gold

Nestled in the rolling hills of Chianti, just outside Florence, Fattoria San Michele a Torri is home to nearly 40,000 olive trees. The estate has been cultivated by the same family for generations and has been certified organic since 1993.

From the entire annual harvest, only the very finest olives are selected to become Laudemio, the estate's most prestigious extra virgin olive oil.

Produced primarily from Frantoio and Moraiolo olives, with smaller amounts of traditional Tuscan varieties including Leccino, Pendolino and Cerretana, Laudemio is harvested at the ideal stage of ripeness, typically from late October through early November.

Within 12 hours of harvesting, the olives are milled on the estate and the oil is immediately filtered to preserve its freshness, aroma and nutritional quality.
