The olives are harvested in the Chianti hills and milled at the estate’s own mill within 12 hours of harvesting. The oil is filtered immediately to preserve freshness, aroma and natural plant compounds.

At Fattoria San Michele a Torri, in the hills outside Florence, the olives used to produce the estate’s organic extra virgin olive oil are grown. The 3-litre can is made for those who want the quality of a single Tuscan producer in a larger, more practical format for everyday use.

The oil is made primarily from Frantoio and Moraiolo olives, supplemented with smaller amounts of Leccino, Pendolino and Cerretana. The olives are harvested at optimal ripeness, usually from late October to early November.

From Olive Tree to Oil Within 12 Hours

After harvesting, the olives are brought directly to the estate’s own mill, where they are processed within 12 hours. The oil is immediately filtered to preserve its fresh flavour, aroma and nutritional qualities.

The 2025 harvest has a very low acidity level of around 0.15%, a polyphenol content of approximately 300 mg/L and around 280 mg/L of tocopherols (vitamin E), according to the producer’s stated analysis values.

Fresh, Fruity and Peppery

The flavour is distinctly fresh and fruity, with green and herbaceous aromas reminiscent of fresh olives. It finishes with a pleasant peppery character, a classic hallmark of fresh, high-quality extra virgin olive oil.
